Sunrise Gumbo
Have you ever taken the time to see the sunrise in the morning? If you have not, you should go to your window and embrace the natural light that awakens you. Who knows, “You might finally see someone in your household or a neighbor sneaking in the house at the break of dawn. That’s the half of it, there’s a lot more happening in your neighborhood, if you take the time to get out of your bed to rise up with the sunrise.
Ingredients
6 boneless skinless chicken thighs (cut into 1/4 quarters)
1 1/2 cup raw shrimp (devein on both sides)
1 pkg. kielbasa sausage (chopped)
1 cup sundried tomatoes (finely chopped)
2 quarts of chicken stock
1 cup light or heavy cream
1 cup onion
3 garlic cloves
1 cup parsley
1/4 cup Worcestershire sauce
2 cups water
1 tsp. creole seasonings
1/2 tsp. black pepper
1/2 tsp. salt
1/2 tsp. garlic powder
4 tbsps. canola oil
Roux
1/2 cup flour
1 tsp. turmeric
2 tbsp. canola oil
Preheat large pot with canola oil
Step 1: In large mixing bowl, season the chicken with salt, pepper, creole seasoning, and garlic powder. Place chicken in pot and seer for 5 minutes on each side to brown. Remove chicken from pot and set aside.
Step 2: For the roux, leave the pot on stovetop and add flour and tumeric. Stir roux until darken to a golden yellow and remove pot from stove. Once roux has cooled, return pot back to stove and add 2 more tbsp of oil. Add sundried tomatoes, sweet mini peppers, onions, and garlic. Sauté until translucent. Add Worcestershire sauce and stir roux for 3 minutes.
Step 3: To the pot, stir in chicken stock, heavy cream, and water until combined. Fold in chicken and add kielbasa to the pot. Bring to a boil. Reduce heat and simmer uncovered for 45 minutes. Last 5 minutes of cooking the gumbo, add shrimp and parsley. Ladle up and serve over rice.
Cooking Advisory Tip (CAT): Good gumbo to sit and watch the sunrise whether you are solo, in a relationship, or with loved ones. Not good for anyone out there cheating and trying to get home before sunrise!
